Resolution
Disable the Receive Segment Coalescing (RSC) feature in the vSwitch
Set-VMSwitch -Name vSwitchName -EnableSoftwareRsc $false
Set-VMSwitch -Name vSwitchName -EnableSoftwareRsc $false
